About the course
The culinary management AS degree teaches you the skills necessary to work as a cook or chef, and prepares you for commercial and institutional management positions in the culinary industry. If you're previously or currently employed in these occupations, this program offers supplemental training. The coursework includes sanitation and safety, maintenance and operation of equipment, recognition and identification of foods, proper storage of equipment, methods of preparation, usage of foods, methods of cooking, garde manger, performing different types of food services, nutrition, baking, communication skills, math skills, computer applications, supervision management, professionalism, culinary organization, food and beverage purchasing, dining room management, and beverage management. Students also receive training in communications, leadership, human relations, finance, employability skills, sanitation and safety, and efficient work practices. Accredited by the American Culinary Federation Foundation, this program provides hands-on experiences in a simulated job environment with industry equipment, supplies and standards. How to apply
Entry requirements for Hillsborough Community College
To be eligible for admission to an associate degree program at HCC, applicants must submit documentation that they have the equivalent of one of the following:
high school equivalency certificate (GED)
Associate or higher degree
standard high school diploma
If you graduated from a high school outside of the United States, your transcripts, graduation certificates and/or exam results must be evaluated by a NACES-approved agency to prove equivalency with a U.S. high school diploma.
Official Transcripts from all institutions attended be sent to HCC in a sealed envelope or electronically directly from the issuing institution.
TOEFL score of 61 (iBT)/173 (CBT)/500 (PBT) or higher
IELTS Academic overall band score of 5.5 or higher
iTEP Academic score of 4.0 or higher
STEP Eiken minimum score of Grade 2A or higher
Cambridge English: C1 Advanced and C2 Proficiency, minimum score of 165 or higher
SAT scores (college-level reading): Old SAT section score of 440 or new SAT test score of 24 or higher
ACT scores (college-level reading) of 19 or higher
